All Quest Bars are made of high quality protein and have plenty of fiber, but these days that’s not enough. Food tech has advanced to the point that a nutrition bar must also be delicious to be called the best. So in this review I’ll let you know how the Coconut Cashew Quest Bar tastes, and what difference the new fiber type has made.

It’s an uncoated protein bar flavored with dried coconut and cashew nuts. This is what it looks like:
Taste & Texture
It’s sweet, softly chewy, and the main flavor is coconut, the bits of which are large enough to also add some interesting texture. Much less prominent is the cashew element, both taste and texture-wise—the pieces are so small they’re almost imperceptible.
I actually really like this bar, but larger cashew nuts would improve it.
As with all Quest Bars it’s great as it is, but it’s even more rich and dessert-like heated about 10 seconds in a microwave or baked a few minutes (which is even better because the outside goes crispy).
Corn Fiber Recipe Update
Quest Nutrition built their reputation with IMO (isomaltooligosaccharide) fiber as a main ingredient in their bars. They’ve since removed IMO from their line up entirely and now use corn fiber instead, claiming it makes a softer, longer-lasting product.
The IMO version could get quite tough towards the end of the use-by date. The updated Coconut Cashew Quest Bar I had was noticeably softer, and the fiber change seemed to be an improvement.

Coconut Cashew Quest Bar Rating: 8/10
This bar is delicious, but slightly less stratospherically so than some of Quest’s other flavors, which means I normally only buy it for a change.
